Simon usually does all the cooking when it is just him and Alex, but Esther and I took over the kitchen, except for chapati’s and eggs which is Simons favourite. Altho one day Bri wanted to learn to make the chapati’s (flour, onions and water mixed together, bit like tortillas in NZ) make the dough, roll small balls into flat pancakes and cook in the pan over the fire or coal burner, which are the only ways of cooking at the campsite. Then when they are ready you fry scrambled eggs, onions and tomatoes and put in the middle before rolling up. Sam and Deane eat the eggs, the rest of us eat only the chapati’s, which are really filling.
We have to boil all water form the water bore before we use it and we only take and drink filtered water, we have gone through 8 boxes (12 x 1.5litre bottles) in just this one stay. Every time Shannon comes we send a couple of boxes back for refilling at Mukono to be brought back next time he visits.
